A lot of people think at first that that our walnut syrup is made from the nuts. That misconception could not be farther from reality. Truth be told it is made much the same way as pure maple syrup. Sap is collected from the trees and the sap then filtered and boiled down to the appropriate sugar content. However, though the main process of making walnut syrup is identical to maple syrup, there is one major difference. Walnut syrup has PECTIN in it! So then, as the syrup boils the pectin gels and needs to be extracted through extra filtering.
The pectin in walnut sap means two things: First, there are no short cuts to extract the water from the syrup by using reverse osmosis, 100% of the sap must be boiled down. Secondly, the pectin needs to be removed and this requires rigorous filtering and dealing with plugged filters. It is filtering this sap in the sugar making process that we hope to help with in these videos. It is the number 1 question people ask and are frustrated about when trying to their own walnut syrup.
